Pat’s Black Bean Salad

Here’s a delicious black bean salad you can make ahead of time, perfect for family gatherings or to eat while watching the Olympics.

Ingredients for Pat’s Black Bean Salad

Mix together in a large serving bowl:

15oz can of Black Beans – drained and well rinsed

3 Roma tomatoes (any firm tomatoes will do) – chopped

1 or 2 bunches of Cilantro – finely chopped

3 Green Onions – sliced

1 or 2 Avocados – chopped

2 Tablespoons Lemon Juice

1/4 cup Seasoned Rice Vinegar

Pat’s Black Bean Salad – Delicious!

Marinate in refrigerator for at least one hour.

Serve chilled.  Serves 6.
